Ingredient
1/2 cup flour
1/2 cup corn starch
1 egg (beaten)
125ml coconut milk
30ml evaporated milk
75ml sugar
60ml water
Method
Add sugar and coconut milk to the beaten egg. Mix well.
Mix flour and corn starch. Pour in the beaten egg gradually while stirring.
Add evaporated milk and water. Stir well until it is consistency.
Heat some oil (enough to cover the mould). Dip the coin-shaped mould into hot oil quickly. Dip the heated mould into the egg batter.
Dip the mould with batter into hot oil. Let it fry briefly and try to knock the egg ring off the mould gently. You can keep on dipping the mould in the batter to make another one. Fry the egg ring until lightly browned. Drain the excess oil from the egg rings and leave it to cool. Serve.
