Ingredient
1 tbsp dadi fish flakes
150g smooth loofah
100g minced pork
2 bowls cold rice
4 cups chicken stock
1 celery stalk (chopped finely)
2 tbsp dong cai (preserve vegetable)
2 stalks spring onion (chopped finely)
1 stalk coriander (chopped finely)
Seasoning
1 tsp salt
1 tsp fish sauce
1/2 tsp sugar
A few drops sesame oil
Pepper to taste
Sauce
Marinade:
1 tsp light soy sauce
1 tsp sugar
1 tsp fish sauce
1 tsp corn starch
Pepper to taste
Method
Take out cold rice from fridge. Rinse with boiled water. Drain.
Rinse dong cai. Squeeze dry. Mix with some sugar. Marinade minced pork and leave for 15 minutes.
Peel smooth loofah and remove stem. Rinse and cut into small pieces.
Boil chicken stock. Add minced pork and keep stirring till pork is done. Add chopped celery, dong cai, fish flakes and smooth loofah . Bring it to boil. Sprinkle chopped spring onion and coriander on top. Serve.
