Ingredient
Stock 6 taels
Soft-shelled turtle's shell 5 taels
Green Chinese spinach 1/2 catty
Seasoning
Dark soy 1 tsp
Salt a pinch
Sugar a pinch
Sauce
Thickening:
Corn starch 1/2 tsp
Method
Soak soft-shrelled turtle shell. (Keep changing water while soaking.)
Blanch green Chinese spinach in salty water with oil. Drain and place on a serving plate.
Heat stock and cook soft-shelled turtle shell until done. Add seasonings and thicken the sauce with corn starch solution.
Pour over the bed of green Chinese spinach.
