Ingredient
8 medium shrimps
1 tsp diced red chili
1 tsp shredded shallot
1 tsp diced ginger
1 tsp grated garlic
2 tsps caltrop starch
2 tbsps Japanese eel sauce
1 tbsp Japanses sake liquor
Seasoning
1/2 tsp salt
1 tsp sugar
pepper as desired
3 tbsps water
Method
Trim the legs off the shrimps. Make a cut along the back of each shrimp with a knife. Devein. Sprinkle caltrop starch on the shrimps.
Heat 1 1/2 tbsps of oil in a wok. Fry shrimps until 80% done.
Add diced red chili, shredded shallot, diced ginger and grated garlic. Stir fry briefly. Then sprinkle wine
Pour in Japanese eel sauce and seasoning. Cook for a while until the sauce reduces. Serve.
