Ingredient
Egg Whites 8
Milk 3 taels
Baby shrimps 2 taels
Baby clams 2 taels
Shrimp eggs as desired
Seasoning
Salt 1/2 tsp
Pepper 1/4 tsp
Sugar 1/4 tsp
Method
Blanch baby clams until done. Drain. Heat oil in a wok. Stir-fry clam and shrimps until done. Set aside.
Mix milk, egg white and seasonings in a large bowl.
Heat oil in a wok. Pour the egg white mixture into the wok and scramble until semi-set.
Add clams and shrimps. Continue to scramble until done. Sprinkle the shrimp eggs over the scrambled egg white.
