Ingredient
Chicken 2 1/2 catties
Seasoning
Marinade:
Water 1.5ml
Soy 300g
Ginger 6 chiens
Spring onion 2 stalks
Celery 1 tsp
Bean sauce 1 tsp
Salt a pinch
Sauce
Glazing:
Vinegar 1 tbsp
Maltose a little
Method
Rinse chicken and marinate for an hour. (enough to cover the whole chicken)
Put all the marinade ingredients back in the tummy of the chicken. Seal with a skewer.
Mix the maltose with vinegar well as glazing. Glaze the chicken.
Preheat the oven to 200C. Bake the chicken for 30 minutes until golden brown. Pour boiling oil on the skin side of the chicken until crispy.
Chop the chicken in bite-size pieces. Save the gravy including marinade ingredients. Reheat the gravy with sugar in the microwave oven. Sift the gravy and serve with chicken as dipping sauce.
