Ingredient
Boston Lobster 2(3 catty)
Pork 1 lb
Chopped green pepper 1
Chopped Spanish onion 1
Crushed garlic 3 cloves
Beaten eggs 2
Chopped coriander 2 tbsp
Chopped spring onion 2 tbsp
Olive oil 5 tbsp
Black pepper 1/2 tsp

Salt 1/2 tsp
Sugar 1 tsp
Corn starch 1 tsp
Soy sauce 2 tsp
Pepper 1 pinch

Corn starch 1/2 tsp
Method
Ground pork coarsely with kitchen knife. Marinate.
Clean and chop lobster into decent-sized pieces.
Heat olive oil over medium heat in wok, saute ground pork for 2-3 minutes. Then, add the chopped green pepper,. Spanish onion and crushed garlic, saute for another 2-3 minutes.
Turn to high heat. Put lobster pieces and stir well with the meat mixture. Add 1/2 cup of water. Cover and cook over high heat for 4-5 minutes.
Uncover, then stir lobster well to let it cook evenly. Add 1/2 cup of water at most if the ground pork seems too dry. Cover and cook for another 7-8 minutes.
When the lobster is done, thicken with corn starch solution. Turn off heat, then stir in beaten eggs and sprinkle with black pepper. Garnish with chopped spring onion and coriander.
