Ingredient
24 taels spare rib
2 tsp fish sauce
1/2 tsp salt
some tamarind
some palm sugar
some shallot
Seasoning
2 tsp salt
2 tsp soy sauce
1 tbsp sugar
2 tsp rose wine
1 tsp dark soy sauce
Method
Soak the tamarind in hot water to make pickled water.
Rinse the spare ribs and absorb the water and marinate with marinate with marinade for 1 hour.
Heat the wok to sautee shallot. Then, add in spare ribs.
Then, pour in tamarinded water. Then turn to high heat to braise the spare ribs for 5 minutes. Then, add in palm sugar and seasonings. Then, turn to medium heat to braise for another 20 minutes.
